Kale Ghochi pistachio or jumbo pistachio is one of the best varieties of pistachio in Iran, which is one of the most commercial and economical types of pistachio in Iran. The popularity of the ram head pistachio is due to its large kernels and good taste.
It may look like a pistachio (round), but it is generally larger and heavier and therefore has fewer per kilo.
Although the origin of Kole Ghochi pistachio dates back to Rafsanjan, in recent years, very good transplants of Kole Ghochi pistachio trees have been made in Khorasan province, especially Sabzevar city.

As its name suggests, this pistachio has the largest kernels, and the producers classify it in the super-coarse pistachio category. This pistachio is very similar to the California pistachio. Also, the demand for this pistachio is very high in the Iranian market.
This pistachio is short and slightly rounder in appearance. The coarse shape of this pistachio makes it somewhat like a hazelnut pistachio. This pistachio has less weight due to the risk of being large and coarse, and therefore there will be less of it in one kilo.
The size of this pistachio is round and large, and the color of its shell is light and pale cream. Also, the color of its core is greenish-yellow, and the percentage of smiling is normal (this percentage depends on whether it was opened naturally or mechanically).
6- Technically, ram head pistachios are divided into two groups
Open Natural Pistachio:
Pistachios normally grow on trees, now if the farmers put the pistachios on the tree until the kernel grows enough to crack the hard shell, it will open naturally. This means that the shell of the pistachio is opened without any external force, which is more expensive than the mechanical type.
Mechanically opened pistachios:
If farmers harvest the pistachio kernel before it is mature enough, the shell will be closed and the kernel will be smaller. In this type, manufacturers open the shell with the help of machines.
